The word “mousse” in French means “foam,” which perfectly describes the light and airy texture of this dessert. Chocolate mousse is typically served chilled and can be enjoyed on its own or as a filling for cakes. In class, you are going to prepare Royaltine / Feuilletine, flourless chocolate cake, jelly filling, mousse and finally a mirror glaze.
*We will highly recommend to bring home the cake immediately after class to chill and firm up the cake.
